Once the malolactic fermentation is completed, they are then kept in refinement for about 7-8 months. Fermentation and aging in stainless steel. PAIRING WITH FOOD A versatile wine in pairings, with the characteristic traits of full-bodied red wines. The pairings range from appetizers based on cured meats, to first courses with meat-based sauces, but also roasts and small game dishes, to medium or longer aged cheeses. TASTING It is advisable to open the bottle at least one hour before tasting. Use a medium-large glass, balloon or wide light to allow the diffusion of the aromas. Serving temperature, 18-20°C.
