Type history and area of origin: Brut sparkling wine classic method.
The passion and knowledge we received from internships and work experience with Champagne producers led us to experiment and transfer their winemaking and fermentation methods to our grapes. The collaborative relationship between our friend Enologist and Champagne producer Julian Gout, a graduate of the Reims-Champagne Faculty of Science, and our Enologist Lamberto Tosi has enabled us to realize our classical methods. Fruit of twenty months of maturation in the cellars here is our Segreto brut classic method fut de cheine. Made from grapes harvested by hand the third week of August . The straw yellow color and its aromas , make it a truly interesting wine.
Pinot Noir 50% Chardonnay 50%.
Controlled fermentation in steel for pinot noir and in tonneaux for chardonnay, which ages in our cellars in oak tonneaux for 6 months. Assembled then with Pinot Noir, it remains in the bottle on lees for 36 months, disgorged by hand in our cellars in February.
