Vinification and ageing: With the aim of getting the most out of our grapes, the harvest is exclusively manual. The grapes are transported in small baskets to the winery, destemmed and immediately placed in the couves. Alcoholic fermentation takes place in cement containers, at 24° for 7/8 days. The refinement takes place with passage in oak barrels for about 10 months, new in the first part of the aging and oak barrels of second passage in the second part. The non-phythrate wine is then bottled and left in the bottle for another 3/4 months before being marketed.

The winery planted its vineyards near the sea 15 years ago and has been producing both Classic Method and Charmat Method sparkling wines for over 10 years
They make sparkling wine entirely in their cellar, where their km0 bubbles are born, rest and evolve.
They are the expression of the territory and nature that surrounds the estate.
It was a gamble, but with passion and dedication and thanks to the experience and knowledge of his oenologists he made this dream come true. They produce 40,000 bottles and more than half are represented by sparkling wines from the Tuscan Coast.
Segreto Brut started this journey, it is their Classic Method of Pinot Noir and Chardonnay. Pas dosé is decisive and sharp that fully represents the territory.
Segreto brut Fut de Chene, Classic Method of Pinot Noir and Chardonnay in equal parts and fermentation and maturation in oak tonneau. The elegant bubbly. Vini Buoni d’Italia awarded with the Crown, Top Recognition 2021 – Merano Wine Hunter Award – Guida Veronelli 2020-2021-2022.
The Metodo Classico di Sangiovese Segreto Brut Fut de Chene Rosé represents Tuscany itself but in a different guise, always maintaining the characteristics of the grape variety with a personality all its own. It is a sparkling wine with character and a captivating sip. It ferments and ages in French oak tonneau and then moves on to the mise en bouteille phase and rests on the lees for a total of 24/36 months. Zero dosage.
Then there are the Charmat SabbiaMare Methods with Sangiovese vinified in white and STiLE Segreto di Pinot Noir, they are produced in the winery’s autoclaves and are bottled with its own isobaric bottling machine. They represent the expression of the terroir and vineyards of the Tuscan Coast

SABBIAMARE IS OUR SPARKLING WINE OF THE SANDS: A BUBBLE THAT COMES FROM THE SEASHORE.
For the French it would be a Vin de Sable, Tenuta Mariani calls it SabbiaMare.
Best known in France, the Beach Wines or Sand Wines are unique, special and… Marine!
SabbiaMare, in white and pink versions, comes from the vineyards located in the Migliarino and San Rossore Park, on sandy soil 600 meters from the sea, where the roots of the vines sink into the saline sand in the past bathed by sea water, and the brackish sea lies on the leaves of the vineyards.
Produced with few filtrations and low sulphite content, it is a natural wine, so pleasant that it is also considered thirst-quenching.
It is a bubble capable of emptying the glass due to its versatility and drinkability
A thirsty wine, or vin de soif as my friend Julien would call them.
These sandy soils just a few meters from the sea, the sea breeze that caresses the grapes make them fresh, saline and fruity, with a marked flavor that makes them suitable for aperitifs but also for the whole meal.
The grape varieties used are a Sangiovese vinified in white, Vermentino and Chardonnay for the white version and a Sangiovese and Syrah for the rosé version.
