GRAPES: Predominantly Sangiovese, with additions of Ciliegiolo, Syrah and Merlot that vary according to the characteristics of the vintage

VINEYARD FEATURES: Vineyards surrounding Pieve Santo Stefano. Altitude: 200-250 m a.s.l. Clay loam soil, with a neutral to sub-acid reaction, rich in mineral elements and poor in organic matter. Planting density: about 5000 vines/ha
ANNUAL PRODUCTION: 70q.li/ha
VINIFICATION AND AGING Destemming-crushing, maceration on the skins between 15 and 18 days depending on the vintage with periodic and regular pumping over of the must on the pomace. After alcoholic and malolactic fermentation, the product is aged in steel, with regular racking,
until the spring of the year following the harvest. After aging, the wine undergoes a slight clarification, is bottled and left to rest in the bottle for a few months before being marketed.
