VINEYARD FEATURES: loc LIppo, Pieve Santo Stefano. Altitude: 200-250 m a.s.l. Clayey-loam soil, with a neutral to sub-acid reaction, rich in mineral elements and poor in organic matter. Planting density: about 5000 vines/ha
ANNUAL PRODUCTION: 50 q.li/ha
VINIFICATION AND AGING
Depara-crushing, maceration on the skins between 20 and 25 days depending on the vintage with periodic and regular pumping over of the must on the pomace. In addition to pumping over, some délestage are practiced. After alcoholic fermentation, malolactic fermentation and aging of the product takes place in large capacity French oak barrels for 12 months. After a few months in steel following aging in barriques, the wine undergoes a slight clarification, bottled and left to rest in the bottle for a few months before being marketed
TASTING NOTES
COLOR – Ruby red colour, deep and deep
NOSE – The aroma, persistent, fine, complex, floral of violet and with spicy tones, is enriched with spicy notes with aging in large French oak barrels that completes the bouquet of the wine
PALATE – Dry, savory taste, with excellent structure, balanced tannins and a long finish
