VINIFICATION AND AGING
Destemming-crushing, maceration on the skins for between 20 and 25 days depending on the vintage with periodic and regular pumping over of the must on the pomace. In addition to pumping over, some delestages are practiced After alcoholic fermentation and malolactic fermentation, the subsequent aging period takes place in large-capacity French oak barrels for 12 months. After a few months in steel following aging in barrels, the wine undergoes a slight clarification, bottled and left to rest in the bottle for about 12 months before being marketed.
TASTING NOTES
COLOR – Ruby red color, bright and bright on the nail, tends to evolve with aging in the bottle towards lighter red hues.
NOSE – The scent of small wild and forest fruits make it very pleasant at first taste. Gooseberry, raspberry and blueberry are immediately noticeable, light fresh vegetal notes enrich its complexity
AL PALATO – Dry flavor, with good alcohol content and good structure, it best represents the virtues of Cabernet Franc, elegant and refined, with sweet and soft tannins.
FOOD PAIRINGS
Dry red. It is perfectly suited to meat-based dishes of Tuscan cuisine and in particular that of Lucca, especially with fragrant dishes with consistent flavors. Excellent with dishes based on truffles, porcini mushrooms and stewed game
