VINIFICATION AND AGING
Destemming-crushing, maceration on the skins between 18 and 25 days depending on the vintage, performing periodic and regular pumping over of the must on the pomace during alcoholic fermentation. After alcoholic and malolactic fermentation, the product is aged in steel, with regular racking,
until the spring of the year following the harvest. After aging, the wine undergoes a slight clarification, bottled and left to rest in the bottle for a
few months before being marketed
TASTING NOTES
COLOR – Intense, deep ruby red
NOSE – Typical, strong bouquet, with “male” aromas of Ciliegiolo: red fruit, pomegranate, currant in evidence
PALATE – Secco, strutturato, dal tannino profondo e dolce

Dry red. Perfect with Tuscan cured meats, medium-aged cheeses, tasty and concentrated, game-based dishes.
