The harvest takes place at the beginning of October and, after fermentation, the wine matures in French oak barrels for 18 months; then the refinement in the bottle takes place for about six months.
It is an important wine, with an intense ruby red color with orange reflections.
It smells of morello cherry, ripe blueberries, black pepper, tamarind, tobacco leaves, vanilla and butter.
The taste is intense, full, with the softness of the morello cherry that also returns to the palate, balanced by spices.
It goes very well with stewed wild boar, hare, lard and aged cheeses.
Serve at 18°C.
