The comment of Francesco Petacco, well-known oenologist and expert sommelier, after the tasting of Pecora Nera ” La Pecora Nera is a great red wine made mainly from Sangiovese grapes with a balance of native red grape varieties. The grapes were harvested at the end of September when they were at the right polyphenolic ripeness and were then vinified in cement. The wine was aged partly in French oak and partly in steel. The nose presents aromas of currant, cherry and juniper berries followed by medicinal herbs and flowers macerated in a mineral embrace. On the palate there are pleasantly small fruits evoked on the nose, the gustatory dynamics are deep thanks to a stratified tannin, the important structure is innervated by an acid backbone that gives it a vibrant brilliance up to the finish of long mineral persistence”.
