VINEYARD FEATURES: Vineyards surrounding Pieve Santo Stefano. Altitude: 200-250 m a.s.l. Clayey loam soil, with a neutral to sub-acid reaction, rich in mineral elements and poor in organic matter. Planting density: about 5000 vines/ha

VINIFICATION AND AGING
Separating and crushing, maceration on the skins for 21-25 days depending on the vintage. The extraction of the noble compounds of the skin takes place through periodic and regular pumping over of the must on the pomace during alcoholic fermentation. After alcoholic and malolactic fermentation, the product is aged in steel, with regular racking,
until the spring of the year following the harvest. After aging, the wine undergoes a slight clarification, is bottled and left to rest in the bottle for a few months before being marketed.
TASTING NOTES
COLOR – Ruby red colour, intense, with violet nuances at a young age
NOSE – Scent of small berries, sweet vegetal nuances reminiscent of cut hay, lavender in bloom
PALATE – Dry taste, with good structure. The tannins are sweet and ripe, round, modestly acidic
FOOD PAIRINGS
Dry red. It goes perfectly with most of the dishes of Tuscan cuisine but finds its best place when combined with red meat, especially game
