Vinification and aging: Manual harvest. Longer or shorter macerations depending on the vintage, in pneumatic press. Mashing of juice at low temperature and spontaneous fermentation through the addition of vineyard-born pied de cuve. Fermentation and aging are carried out in wood on fine lees. Clarified with bentonite and filtered. Wine is added with sulfites
To the eye: Pale pink, with hints of onion skin
Nose: Refreshing, complex and intense. Floral notes of wild rose and white flowers, fruity notes of raspberries and citrus fruits
Palate: Fresh, full, savory and good balance. The finish is persistent, savory and silky
Pairings: With its balance of freshness, creaminess and minerality, Fattoria Sardi “Le Cicale” IGT Toscana is a rosé wine for fish dishes, shellfish, white meats and cheeses. It is appreciated at a temperature of 12°C-14°C and at all times of the year
