The Cannellino di San Ginese in Lucchesia has a great importance in the local diet as it adapts to multiple uses. It is an excellent base for delicate soups or a delicious side dish to be flavored with extra virgin olive oil. White in color, Cannellino is known for its softness and delicacy on the palate.
Due to its characteristics, the Cannellino, known for many years only in Lucca, from about 1940 became a bargaining chip, spreading and managing to be appreciated even in the neighboring areas.
