Vinification and aging: Harvested by hand. Selected and destemmed grapes. Spontaneous fermentation at controlled temperature in cement tanks. Maceration is more or less long depending on the vintage. Spontaneous malolactic acid. Aged in concrete for 6 months. Filtrate. The wine is not added sulphites
