A leur arriv\u00e9e en cave, les raisins ont \u00e9t\u00e9 \u00e9grapp\u00e9s, d\u00e9licatement tass\u00e9s et press\u00e9s doucement. Le mo\u00fbt obtenu a \u00e9t\u00e9 transf\u00e9r\u00e9 dans des cuves en acier inoxydable o\u00f9 la fermentation alcoolique s&rsquo;est d\u00e9roul\u00e9e \u00e0 une temp\u00e9rature de 16\u00b0C. Les diff\u00e9rents lots ont \u00e9t\u00e9 soigneusement et r\u00e9guli\u00e8rement \u00e9valu\u00e9s et assembl\u00e9s.
