VINIFICATION AND AGING <\/span>All the grapes are harvested by hand and the bunches are selected with care. A part is de-stemmed by hand and another left in whole clusters and placed in tubs for vinification.<\/span><\/h6>\n
Spontaneous alcoholic fermentation. Maceration time depending on the years. Spontaneous malolactic. Aging in wood.<\/span><\/h6>\n
