VINIFICATION AND AGING: <\/span>All the grapes are harvested by hand and the bunches are selected with care. A part is de-stemmed by hand and another left in whole clusters and placed in tubs for vinification. <\/span>Spontaneous alcoholic fermentation. Maceration time depending on the years. Spontaneous malolactic. The wine is aged in small and large oak barrels.<\/span><\/h6>\n
